Pork, Apple and Walnut Salad
Iwas so busy working today and didn't even think about food. My wonderful hubby knows that I started my 30 day weight management routine and I already feel it around my waist :) . He didn't want me to sabotage my results, so he made me lunch. Do you see why I love him so much? Talk about gratitude!


Honestly, I am not a big fan of salads, so it has to be pretty darn good for me to eat it. This recipe is a keeper. Change ingredients as needed. 

Pork marinade (or use any leftovers instead, chicken, salmon, sausage etc)
1T Dijon 
4 garlic cloves 
1 spring fresh rosemary 
Juice of 1 lemon or 1 drop of lemon oil.
4T olive oil 
Place all ingredients in small food processor and combine.

Cut 1 pork tenderloin into small pieces and mix with marinade for 1 hour to overnight.

Cook pork in pan until fully cooked, about 8 to 10 min on med to high heat 

Salad 
Mixed greens 
1/2 Granny Smith apple chopped 
About eight walnuts chopped 
Goat cheese (as much or little as you like) 
1T dried cranberries  
2T balsamic vinaigrette

Combine all ingredients in bowl, mix with the vinaigrette and add the cooked pork on top.

TIP. Want to kick it up a notch? Skip lemon and add Vitality drops instead. Pre-make a big batch of this dressing and keep it in the fridge. Note that these are really concentrated, a little bit goes a long way.
