Eva and I had British style afternoon tea in the backyard. 
Thank you to chef Robert for delicious food.
Fresh air, sunshine and cucumber sandwiches are great to lift up the mood.
Quick write up how Bob made them:
Half block of cream cheese, large spoon of mayo, 1/2 tsp garlic powder, chopped fresh dill and chives, salt and pepper. Mix well.
Slice cucumbers thin.
Spread cream cheese on one slice of bread, arrange the cucumbers on top of the cream cheese mix, season with a bit of salt, pepper and fresh dill, place other piece of bread on top. And slice of the crust. Cut into smaller pieces rectangle, square or triangles.

What to do with cold coffee :)
My coffee constantly gets cold, because I forget about it or lose it somewhere in the house. Anyone else?
I needed to become smarter with my drinks, sooooo....once it gets cold, I add 1 tsp of the best tasting turmeric in the world and use frothier to give it a great froth. Add few ice cubes and BAM, I have a delicious, iced coffee.

Pork, Apple and Walnut Salad

Pork, Apple and Walnut Salad
Iwas so busy working today and didn't even think about food. My wonderful hubby knows that I started my 30 day weight management routine and I already feel it around my waist :) . He didn't want me to sabotage my results, so he made me lunch. Do you see why I love him so much? Talk about gratitude!

Honestly, I am not a big fan of salads, so it has to be pretty darn good for me to eat it. This recipe is a keeper. Change ingredients as needed. 

Pork marinade (or use any leftovers instead, chicken, salmon, sausage etc)
1T Dijon 
4 garlic cloves 
1 spring fresh rosemary 
Juice of 1 lemon or 1 drop of lemon oil.
4T olive oil 
Place all ingredients in small food processor and combine.

Cut 1 pork tenderloin into small pieces and mix with marinade for 1 hour to overnight.

Cook pork in pan until fully cooked, about 8 to 10 min on med to high heat 

Mixed greens 
1/2 Granny Smith apple chopped 
About eight walnuts chopped 
Goat cheese (as much or little as you like) 
1T dried cranberries  
2T balsamic vinaigrette

Combine all ingredients in bowl, mix with the vinaigrette and add the cooked pork on top.

TIP. Want to kick it up a notch? Skip lemon and add Vitality drops instead. Pre-make a big batch of this dressing and keep it in the fridge. Note that these are really concentrated, a little bit goes a long way.

Bob's Shrimp

Bob's Shrimp
When someone says shrimp, I imagine a plate of pink shrimpies, placed in a circle.
Below is Bob's imagination and creation :)
It was a huge crowd pleaser for adults and kiddos.

15 head on large shrimp
1 stick of butter
1 head of garlic minced
1tsp ancho chili powder
Salt and pepper

Clean and peel and butterfly shrimp leaving head on.
I'm sauce pan melt butter and add garlic, cook on low so that garlic does not brown, add ancho, salt and pepper. And remove from heat.

Brush shrimp with butter mixture and grill. Continue to brush during the cooking process until shrimp turn pick and meat is firm. This will not take long and be careful to not over cook.

Drizzle mayo and some chopped cilantro to serve.

Chili lime mayo
1 cup mayo
1 chipotle pepper
Juice of 1 lime
Small hand full cilantro with small stems left on
Salt and pepper

Place all ingredients in blender to combine.

Sourdough Bread and Starter

Sourdough Bread and Starter
I have finally learned how to make sourdough bread. Ahhhhhh it's so satisfying!

I have made many loaves that were as hard as a brick and tasted.....well, it was hard to bite into them :)

And then I found Buzzby Bakes videos and everything has changed. I love how particular he is with each step. I followed his directions step by step and I am awarded with delicious bread. 

That being said, there is no reason for me to recreate the wheel, when he has done such a wonderful job.
